Vegan Thai green curry with 2 clean eating chicken options for your choice!


I love...lovee Curry, Thai or Indian, I just love the fragrance and the flavors so much .My green Thai curry is healthy & fast ( but if you can get your hands on fresh ingredients to make your own green curry , by all means, do that, but I found this organic all natural GMO free paste and I love it! ) My green curry even thou is vegan does have depth in the flavors! Try it as is vegan or over broil thin chicken breasts as a green curry sauce or just plain substitute the potatoes for chicken cubes for a clean eating meal! Serve with white Jasmin rice and enjoy it!

INGREDIENTS

2 medium sweet potatoes, chopped ( 2 big boneless chicken breast cubed for clean eating meat eaters) 2-3 teaspoons green organic natural Thai curry paste a small piece ginger, fresh grated 1/2 grated lime 2 cans of coconut milk ( I used one light and one whole, less calories lots flavor! )

Juice of 1/2 large lime 1 teaspoon light brown cane sugar 2 tablespoons natural smooth organic peanut butter

3 spears of bok choi sliced Sriracha, to your taste

1 big clove mashed garlic Cilantro, lime and chilli, to serve Peanut oil, for cooking Salt and pepper to your taste

1. In a large pot, add some peanut oil and turn the pot on to a medium heat. Add the green Thai curry paste, ginger adds the garlic and cubed sweet potatoes or chicken, and stir intermittently for about 10 minutes, or until the cubes have begun to cook through. 2. Add the grated lime skin, brown sugar, and stir through. Follow this up with the coconut milk, peanut butter, salt and pepper and lime juice, and stir well. Put the lid on, turn to a low-medium heat and allow to cook for 15-20 minutes, or until the sweet potato or chicken is completely cooked. For the potatoes don't stir too much or overcook, or will be mush, delicious mush, but mush. You can add some tofu if you want. Add the bok choi and half the bunch of cilantro, and cook for another five or so minutes, until they're cooked. 3. Divide into four bowls, and serve with extra cilantro, chili peppers, and lime wedges.

Instead of substitude the potatoes and cubing the chicken breasts you can do as I did for my son, I a chicken breast in halve to make it thinner, I seasoned it with salt, lime juice and pepper and broiled it...then serve it with the green curry as a sauce and rice ! Try it is really good and healthy!
