The fastest and more delicious clean eats Tex-Mex shrimp you ever try!


This is the easiest recipe I do, and so delicious! What it make it the cleanest is that I use my own homemade clean salsa, wish I had the recipe for here in the blog. I make a big batch and save it in the fridge, use it with chips and to cook with. Like this here today. But you can use organic salsa bought in the store, no probs! Either way, You will love it!

Ingredients

1 pound Jumbo shrimp 1 tablespoon of olive oil 1 big jar of organic salsa ( 16oz of your favorite or my homemade, eyeball it to cover all the shrimp on the frying pan and a little extra ) 1/4 cup cooked sweet organic corn 1/4 cup organic cooked black beans 1 tablespoon of my Tex MEX season mix (or your organic mix, taco mix will do too) 1 teaspoon of light cane brown sugar salt and pepper to taste 1 mashed garlic white rice made to instructions on the package method

Clean and peel the shrimp. In a bowl, season it with the Tex-Mex mix. Add a little bit of salt to it, to exalt the seasoning mix. In a big enough frying pan, heat the oil and add the shrimp. Cook until is almost pink. Add the garlic and saute for some seconds. Add the sugar, the bottle of salsa, the beans, and the corn. Mix everything and cook for about 30 minutes in lo-med. Keep an eye on it, you don't want to dry up the liquids. When ready check the salt and pepper, add more if you need. Serve with white rice piping hot! enjoy it!
