Mediterranean flavors and spicy sardines in this delicious healthy and clean meal


I love this meal, if you had make my Greek clean sauce before you know it is not only healthy delicious and clean but perfect to calm down the heat. So what better than a fresh cucumber and grape tomatoes salad with the sauce to pacify the heat from the jalapenos with the sardines?

You can buy organic spicy sardines with olive oil ready or if you cannot find them, buy a good quality ones in olive oil and spice them up!

Quinoa/couscous mix

1 3/4 Cups of Water or Broth (I like using vegetable broth) 1 Tsp of Olive Oil 1 Clove of Garlic, Minced 1 1/4 Cups of Red Quinoa/Couscous Mixture

In a medium sized pan bring the broth to a boil and add the olive oil, add the couscous/quinoa mix r & simmer about 15 minutes till translucent. Cover and take it off the burner. Cooks like rice no need to drain. Wait 5 more minutes before taking off the lid and fluff with a fork.

Tzatziki-

f you’re not familiar with Tzatziki, it’s a cold, refreshing sauce made from cucumbers and Greek yogurt.

INGREDIENTS

1 medium English cucumber, peeled, seeded and grated and drain 1 teaspoon Kosher salt 1 cup Greek yogurt (or strained homemade yogurt) 2 cloves garlic, minced 1/4 teaspoon dried dill (optional) Juice of 1 lemon (about 1/4 cup) Sprinkle with Fresh mint to taste (optional)

DIRECTIONS

Toss cucumber with salt and let sit in a colander for 10-15 minutes. Transfer cucumber to a bowl. Add yogurt, garlic, dill and lemon juice. Stir to combine. Serve cold.

***Serve over a bed of fresh sliced raw cucumbers and grape tomatoes, thinly sliced raw sweet onions . (yellow onions)

Sardines-

Get high-quality organic sardines in olive oil, Carefully remove the sardines from the cans trying not to break the filets. Sprinkle sardines with lemon juice. Finally sprinkle on finely Jalapenos. (as much as you desire)

Garnish the platter with some parsley & Lemon wedges if you want.

Serve it all together and Enjoy it!
