Octopus with red quinoa and potatoes, a clean warm salad with a side of shave raw carrots and greens


Coming tired from holiday shopping and don't know what to eat? Want something light, healthy but still gives you comfort? The recipe for this delicious "anytime" bowl for any day of the week....Octopus with red quinoa and potatoes with a side of greens and raw carrot, this is an easy light dish that stills gives you that comfort food feeling! Ingredients

1 can organic octopus in hot sauce (one per person) 1 cup cooked red quinoa (per person) 1 medium cooked potato (per person) 2 tablespoon of water 1 cup spring mix of greens (per person) some sliced white onions to taste (I like mine raw, you can cook yours if you prefer) 1 large shave raw carrot (per person) salt and pepper to taste

Instructions

In a small saucepan, I add the red quinoa, the octopus with the sauce, the potato cubed and 2 tablespoons of water (you can add your onion here if you want it cooked) and I mix it all and let it cook until gets a little drier and the mix had absorbed all the flavors. I serve it with a cup of greens and the shaved carrot, sprinkle a little salt and pepper on top and some raw onion slices.
