Coconut healthy pancakes (Dairy Free, Gluten Free, High Fiber, Low/No Sugar, Soy Free, Vegetarian) w

I never had done gluten pancakes before, so I used the recipe from "Bobs red mill" and I developed my own version for you guys, call it "Mounds or Almond joy healthy pancakes"

By using coconut milk and coconut oil instead of the recipe`s olive oil and regular milk and adding coconut flakes to the mix, ( sprinkle with almond slices if you want, I was out of them ) . Please read the note at the end of the recipe. I didn't know how this will result and let me tell you they are just phenomenal! :)

The chocolate syrup is delicious and better for you than the one full of sugars bought ready in the store. It is natural source of flavone antioxidants. The natural antioxidants found in tea and certain fruits can also be found in Natural Hershey's Unsweetened Cocoa, you knew that?.

Of course, enjoy it in moderation as part of a healthy diet and active lifestyle. This is a healthier version of a syrup , so you can use it as topping or to make a healthier chocolate milk.

Pancakes

Ingredients 1-1/3 cups Gluten Free All Purpose Baking Flour 1 tsp Baking Powder 1/2 tsp Baking Soda 1/2 tsp Sea Salt 2 Eggs beaten 1/2 cup almond or coconut Milk

1 tablespoon unsweetened coconut flakes

sliced almonds for topping (optional) 2 Tbsp. Extra Virgin Olive Oil or as I did coconut oil

Instructions

Begin preheating a griddle to medium or medium-high heat (350 - 375°F). Combine the flour, baking powder, baking soda and salt in a medium bowl. In a separate bowl, whisk together the eggs, milk, and oil. With a wire whisk, stir wet ingredients into dry ingredients until smooth. Ladle approximately ⅓ cup pancake batter onto hot griddle. Flip when bubbly and edges are slightly dry, about 3 - 4 minutes per side. Serve hot. Please note: This recipe requires the use of their Gluten Free All Purpose Baking Flour. The Using of their other flour name: Gluten Free 1-to-1 Baking Flour may result in a poor end product.

Healthier home made dark chocolate syrup

Clean Eats healthier dark Chocolate Syrup

(Makes 1 1/2 cups)

Ingredients:
  • 1 cup coconut sugar OR 3/4 cup honey

  • 1 cup unsweetened of the natural, Hershey's dark chocolate cocoa powder

  • 1 teaspoon pure vanilla extract

  • 1 cup water

Directions:
  1. Whisk all ingredients together in a pot and bring to a soft boil, stirring constantly.

  2. Once the syrup thickens, remove e from heat and transfer to a glass container.

  3. Store in the fridge.

Note: Warm in the microwave for 1-2 minutes to get it pouring nicely, as needed.
