Vegetarian clean , easy and fast Bolognese sauce


This is an easy vegetarian version of the famous Bolognese sauce, in this one I used veggie grounds, it is perfect for a weekday as is easy and fast. On another day I will offer you my more complicated version but delicious homemade with veggies version. But let me tell you, I always have on hand some ground veggies like this for fast vegetarian recipes, make sure is a clean brand and you are golden! And as I always explain, the secret not to have bland vegetarian dishes is to treat the main ingredient as you would meat, get them seasoned and sauté them in the seasoning so it adheres the flavors well !

Ingredients

- 1 medium onion - 1 stalk celery - 1 medium carrot - 1 shallot - 2 tbsp. olive oil - 1 pkg Veggie Grounds - 1/2 cup dry red wine - 14 oz organic crushed tomatoes

- 2 mashed and diced garlic cloves - 1/2 tsp salt - 1/4 tsp pepper - 1 tsp Italian Seasonings (clean oregano, basil, parsley ) or fresh to your taste

Method

Chop very finely the onion, celery, carrot and shallot. Add the garlic. Sauté in the olive oil over medium/low heat for about 10 minutes or until softened. Turn the heat to medium and add the veggie ground round, mix well, then add the wine. Allow to simmer for about 5 minutes. Add the crushed tomatoes and all the seasonings, cover and simmer for 30 minutes. Serve immediately over the pasta or over zucchini noodles
